SCALLOP AND PORK SIU MAI DUMPLINGS
SCALLOP AND PORK SIU MAI DUMPLINGS

Ingredients
  • 100g/3½oz scallops
  • roes removed
  • minced in a food processor
  • 100g/3½oz minced pork
  • 2 garlic cloves
  • peeled and finely chopped
  • 1 tbsp coriander stalks
  • finely chopped
  • 1 tsp sesame oil
  • 1 tsp light soy sauce
  • 8 wonton wrappers
Directions
  • Mix all ingredients together in a bowl
  • apart from the wonton wrappers. Lay the wonton wrappers on a clean surface and place one tablespoon of the mixture into the centre of each wrapper.
  • Draw up the sides of the wonton wrappers
  • leaving the top of the filling exposed. Place into a steamer and steam over boiling water for 6-8 minutes.
  • Serve the dumplings directly from the steamer basket.
