SCALLOP AND PORK SIU MAI DUMPLINGS
Ingredients
- 100g/3½oz scallops
- roes removed
- minced in a food processor
- 100g/3½oz minced pork
- 2 garlic cloves
- peeled and finely chopped
- 1 tbsp coriander stalks
- finely chopped
- 1 tsp sesame oil
- 1 tsp light soy sauce
- 8 wonton wrappers
Directions
- Mix all ingredients together in a bowl
- apart from the wonton wrappers. Lay the wonton wrappers on a clean surface and place one tablespoon of the mixture into the centre of each wrapper.
- Draw up the sides of the wonton wrappers
- leaving the top of the filling exposed. Place into a steamer and steam over boiling water for 6-8 minutes.
- Serve the dumplings directly from the steamer basket.
