SEARED SALMON WITH MANGO SALSA
SEARED SALMON WITH MANGO SALSA

Ingredients
  • 2 tbsp olive oil
  • 150g/5½oz salmon
  • thickly sliced
  • 1 lemon
  • juice only
  • salt and freshly ground black pepper
  • 2 asparagus spears
  • chargrilled
  • chopped
  • ½ red pepper
  • chopped
  • 1 lime
  • juice only
  • 1 handful fresh coriander
  • leaves only
  • chopped
  • ½ mango
  • skin and stone removed
  • chopped
  • pinch chilli flakes
  • dash soy sauce
  • 1 tbsp olive oil
  • salt and freshly ground black pepper
  • 1 tsp honey
  • lime wedges and parsley sprigs
  • to garnish
Directions
  • For the seared salmon
  • heat the oil in a frying pan
  • add the salmon and fry on one side for 1-2 minutes. Turn over the salmon
  • squeeze over the lemon juice and season with salt and freshly ground black pepper. Remove from the heat and leave to cook in the residual heat.
  • For the mango salsa
  • mix all the salsa ingredients together in a small bowl until well combined.
  • To serve
  • pile the mango salsa onto a serving plate
  • place the salmon slices around the salsa and garnish with the lime wedges and parsley.
