SESAME-CRUSTED SALMON WITH ORANGE AND SOY SAUCE
SESAME-CRUSTED SALMON WITH ORANGE AND SOY SAUCE

Ingredients
  • 125g/4½oz salmon fillet
  • skin removed
  • sliced in half
  • 1 tbsp sesame seeds
  • 1 tbsp olive oil
  • 2 tbsp chopped fresh coriander
  • leaves only
  • 1 tbsp chopped fresh dill
  • 1 orange
  • juice only
  • 2 tbsp soy sauce
  • 1 orange
  • peeled and segmented
  • to serve
Directions
  • Coat the salmon slices in the sesame seeds.
  • Heat the oil in a frying pan over a medium heat. Add the salmon and fry for 3-4 minutes on each side
  • or until cooked through and golden-brown on both sides.
  • Add the coriander
  • dill
  • orange juice and soy sauce and continue to cook for 2-3 minutes
  • until the sauce is bubbling.
  • To serve
  • place the sesame-crusted salmon pieces onto a serving plate
  • spoon the orange and soy sauce over the fish
  • and garnish with the orange segments.
