SPICY BEANS ON TOAST WITH TOMATO AND BASIL GARNISH
Ingredients
- 2 tbsp olive oil
- ¼ onion
- finely chopped
- pinch chilli flakes
- 2 rashers vegetarian bacon
- chopped
- 2 tomatoes
- seeds removed and chopped
- ½ tinned baked beans
- sieved
- 1 slice white toast
- ½ tomato
- sliced
- 25g/1oz grated cheddar
- 5 fresh basil leaves
- torn
Directions
- Heat the oil in a frying pan and gently fry the onion and chilli flakes for 1-2 minutes
- or until softened
- then add the vegetarian bacon. Fry for 3-4 minutes
- or until golden-brown and crisp.
- Add the tomatoes and baked beans and cook for 2-3 minutes to warm through.
- Serve the beans and bacon on a slice of toast
- with slices of tomato and cheddar on top
- garnished with fresh basil.
