SPINACH AND LENTIL CAKES
Ingredients
- 150g/5¼oz spinach
- chopped
- 85g/3oz Puy lentils
- cooked
- 1 tsp curry powder
- 1 free-range egg
- 2 tbsp plain flour
- pinch chilli flakes
- 1 tbsp oil
- Greek-style yoghurt
Directions
- Mix the spinach
- lentils
- curry powder
- egg
- flour and chilli flakes together in a bowl. Form the mixture into two patties
- Heat the oil in a frying pan and fry the patties for 2-3 minutes on each side until crisp and golden.
- Serve with Greek-style yoghurt.
