SPINACH AND LENTIL CAKES

Ingredients
  • 150g/5¼oz spinach
  • chopped
  • 85g/3oz Puy lentils
  • cooked
  • 1 tsp curry powder
  • 1 free-range egg
  • 2 tbsp plain flour
  • pinch chilli flakes
  • 1 tbsp oil
  • Greek-style yoghurt
Directions
  • Mix the spinach
  • lentils
  • curry powder
  • egg
  • flour and chilli flakes together in a bowl. Form the mixture into two patties
  • Heat the oil in a frying pan and fry the patties for 2-3 minutes on each side until crisp and golden.
  • Serve with Greek-style yoghurt.
