STIR-FRIED SOY AND HONEY PORK WITH BROCCOLI, CHILLI, LEMON AND GOATS' CHEESE
STIR-FRIED SOY AND HONEY PORK WITH BROCCOLI, CHILLI, LEMON AND GOATS' CHEESE

Ingredients
  • 1 tbsp olive oil
  • ½ onion
  • finely sliced
  • 2 cloves garlic
  • finely chopped
  • 200g/7oz pork tenderloin
  • sliced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 lime
  • zest and juice only
  • large handful purple sprouting broccoli
  • cut into florets
  • 55g/2oz hard goats' cheese
  • grated
  • ½ lemon
  • zest only
  • ½ tsp dried chilli flakes
  • salt and freshly ground black pepper
Directions
  • For the soy and honey pork
  • heat the olive oil in a frying pan and cook the onion for 2-3 minutes
  • or until softened. Add the garlic and fry for one minute
  • then add the pork and stir-fry until golden-brown all over.
  • Drizzle over the soy sauce
  • honey
  • lime zest and juice and a splash of boiling water and cook for 1-2 minutes
  • or until the pork is cooked through. Set aside.
  • For the broccoli
  • place the broccoli into a pan of boiling salted water and cook for 3-4 minutes
  • or until tender. Drain well and stir into the pan with the pork
  • then add the grated goats' cheese
  • lemon zest
  • and chilli flakes. Season to taste with salt and freshly ground black pepper.
  • Pile the stir-fried pork and broccoli onto a serving plate and serve.
