HERBED SALMON ON SAVOY CABBAGE SALAD
HERBED SALMON ON SAVOY CABBAGE SALAD

Ingredients
  • 2 25g/1oz fresh salmon
  • cut into cubes
  • 3 tbsp chopped fresh coriander
  • 3 tbsp chopped fresh chives
  • 1 tsp vegetable oil
  • 2 tbsp sesame seeds
  • 1 garlic clove
  • chopped
  • 3 tbsp water
  • ½ lemon
  • juice only
  • 150g/5½oz Savoy cabbage
  • shredded
Directions
  • Place the salmon
  • coriander and chives into a bowl and mix together gently.
  • Heat the oil in a small pan and when hot add the salmon and cook for 1-2 minutes
  • or until cooked through and golden on all sides.
  • For the Savoy cabbage salad
  • place the sesame seeds
  • garlic
  • water and lemon juice into a food processor and blend to a smooth dressing.
  • Place the shredded Savoy cabbage into a large bowl and add the dressing
  • tossing well to coat.
  • To serve
  • place the cabbage salad into the centre of a plate and top with the salmon pieces.
