VIETNAMESE-STYLE CRISPY PORK AND CITRUS SALAD
Ingredients
- 1 tbsp olive oil
- 1 x 150g/5½oz pork fillet
- cut into thin strips
- salt and freshly ground black pepper
- 1 tbsp sesame seeds
- ½ red onion
- chopped
- 1 tbsp clear honey
- 2 tbsp olive oil
- 1 tbsp cider
- 1 tbsp sesame seeds
- 1 tbsp balsamic vinegar
- pinch chilli powder
- salt and freshly ground black pepper
- 100g/3½oz cheddar
- grated
- ½ red onion
- finely sliced
- 1 orange
- peeled and segmented
- handful fresh mixed herbs (such as parsley
- dill
- chives)
- 1 lime
- cut into wedges
- to garnish
- 2 slices ciabatta
- toasted
Directions
- For the crispy pork
- heat the oil in a frying pan over a medium-high heat. Season the pork strips on both sides with salt and freshly ground black pepper and fry for 8-10 minutes.
- Add the sesame seeds and red onion and fry for a further five minutes. Add the honey
- stir well and cook for one minute
- or until the pork is completely cooked through.
- Meanwhile
- for the dressing
- place all the dressing ingredients into a bowl and mix well.
- For the salad
- place the cheese
- onion
- orange and herbs into a bowl and mix well. Pour over the dressing and stir to coat.
- To serve
- place the salad onto a plate and top with the crispy pork. Serve with lime wedges and toasted ciabatta.
