VIETNAMESE-STYLE CRISPY PORK AND CITRUS SALAD
VIETNAMESE-STYLE CRISPY PORK AND CITRUS SALAD

Ingredients
  • 1 tbsp olive oil
  • 1 x 150g/5½oz pork fillet
  • cut into thin strips
  • salt and freshly ground black pepper
  • 1 tbsp sesame seeds
  • ½ red onion
  • chopped
  • 1 tbsp clear honey
  • 2 tbsp olive oil
  • 1 tbsp cider
  • 1 tbsp sesame seeds
  • 1 tbsp balsamic vinegar
  • pinch chilli powder
  • salt and freshly ground black pepper
  • 100g/3½oz cheddar
  • grated
  • ½ red onion
  • finely sliced
  • 1 orange
  • peeled and segmented
  • handful fresh mixed herbs (such as parsley
  • dill
  • chives)
  • 1 lime
  • cut into wedges
  • to garnish
  • 2 slices ciabatta
  • toasted
Directions
  • For the crispy pork
  • heat the oil in a frying pan over a medium-high heat. Season the pork strips on both sides with salt and freshly ground black pepper and fry for 8-10 minutes.
  • Add the sesame seeds and red onion and fry for a further five minutes. Add the honey
  • stir well and cook for one minute
  • or until the pork is completely cooked through.
  • Meanwhile
  • for the dressing
  • place all the dressing ingredients into a bowl and mix well.
  • For the salad
  • place the cheese
  • onion
  • orange and herbs into a bowl and mix well. Pour over the dressing and stir to coat.
  • To serve
  • place the salad onto a plate and top with the crispy pork. Serve with lime wedges and toasted ciabatta.
