WARM PAK CHOI SALAD WITH GINGER AND CHILLI DRESSING

Ingredients
  • 1 pak choi
  • quartered
  • 25g/1oz piece root ginger
  • peeled
  • finely chopped
  • 1 red chilli
  • finely chopped
  • 1 tbsp balsamic vinegar
  • 1 orange
  • peeled
  • segmented
  • 3 tbsp olive oil
  • 1 tbsp fresh chopped chives
  • salt and freshly ground black pepper
Directions
  • Place the pak choi into a steamer and steam for five minutes
  • or until wilted.
  • Whisk the rest of the ingredients together in a small bowl to make a dressing.
  • To serve
  • pile the pak choi onto a serving plate and drizzle over the dressing.
