IRISH OATMEAL with DRIED FRUIT and HONEY

Ingredients
- 1 cup Irish oatmeal
- 5oz dried peach, apricot and pear halves in any combination, cut into 3/8-inch dice (about 1 cup)
- Honey or dark brown sugar
- ½ cup low fat milk, warmed

- In a heavy saucepan, bring 2 cups water, the apple cider, cinnamon stick and salt to a boil. Add oatmeal, stir until smooth and return to a boil. Lower heat and simmer, stirring occasionally for about 30 minutes.
- Remove saucepan from heat. Discard the cinnamon stick and stir in all but about ¼ cup of the dried fruit.
- Divide oatmeal among 4 bowls and top with honey, if desired. Garnish with remaining fruit, serve with warm milk.
