CHILLI BAKED BEANS WITH CRISPY BACON
Ingredients
- 1 tbsp olive oil
- ½ onion
- finely chopped
- 1 clove garlic
- chopped
- ½ red chilli
- deseeded and finley chopped
- 2 tbsp tomato ketchup
- 400g/14oz can cannellini beans
- drained and rinsed
- 1 slice ciabatta
- drizzled with olive oil
- 4 slices streaky bacon
Directions
- Heat the oil in a small saucepan. Add the onion
- garlic and chilli and cook for 2-3 minutes or until the onions have softened. Add the ketchup and beans and cook for a further five minutes.
- Heat a griddle pan until hot. Add the ciabatta and bacon and frym
- turning once
- until the bread is griddled on both sides and the bacon is crisp. Drain the bacon on kitchen paper.
- To serve
- place the griddled ciabatta onto a clean plate
- place the beans on top and sprinkle the bacon on top.
