CHILLI BAKED BEANS WITH CRISPY BACON
CHILLI BAKED BEANS WITH CRISPY BACON

Ingredients
  • 1 tbsp olive oil
  • ½ onion
  • finely chopped
  • 1 clove garlic
  • chopped
  • ½ red chilli
  • deseeded and finley chopped
  • 2 tbsp tomato ketchup
  • 400g/14oz can cannellini beans
  • drained and rinsed
  • 1 slice ciabatta
  • drizzled with olive oil
  • 4 slices streaky bacon
Directions
  • Heat the oil in a small saucepan. Add the onion
  • garlic and chilli and cook for 2-3 minutes or until the onions have softened. Add the ketchup and beans and cook for a further five minutes.
  • Heat a griddle pan until hot. Add the ciabatta and bacon and frym
  • turning once
  • until the bread is griddled on both sides and the bacon is crisp. Drain the bacon on kitchen paper.
  • To serve
  • place the griddled ciabatta onto a clean plate
  • place the beans on top and sprinkle the bacon on top.
