ORIENTAL-STYLE OMELETTE WITH SHIITAKE MUSHROOMS

Ingredients
  • 2 tsp soy sauce
  • 3 free-range eggs
  • 1 tbsp olive oil
  • 100g/3½oz shiitake mushrooms
  • sliced
  • 2 choy sum leaves
  • roughly chopped
Directions
  • Lightly whisk the eggs and soy sauce together in a bowl.
  • Heat the olive oil in a non-stick frying pan and sauté the mushrooms until tender.
  • Stir in the choy sum leaves and cook for one minute
  • until just wilted.
  • Pour in the egg mixture and cook gently until the base sets
  • then turn over and cook for a further minute. Serve immediately.
