ORIENTAL-STYLE OMELETTE WITH SHIITAKE MUSHROOMS
Ingredients
- 2 tsp soy sauce
- 3 free-range eggs
- 1 tbsp olive oil
- 100g/3½oz shiitake mushrooms
- sliced
- 2 choy sum leaves
- roughly chopped
Directions
- Lightly whisk the eggs and soy sauce together in a bowl.
- Heat the olive oil in a non-stick frying pan and sauté the mushrooms until tender.
- Stir in the choy sum leaves and cook for one minute
- until just wilted.
- Pour in the egg mixture and cook gently until the base sets
- then turn over and cook for a further minute. Serve immediately.
