PAN-FRIED SEA BASS WITH GREEN BEAN SAUCE VIERGE
Ingredients
- 2 tbsp olive oil
- 1 fillet sea bass
- skinned
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- salt and freshly ground black pepper
- 1 tomato
- seeds removed and chopped
- 100g/3½oz green beans
- trimmed
- blanched and drained
Directions
- For the sea bass
- heat the oil in a frying pan over a medium heat and cook the sea bass for 2-3 minutes on each side
- or until cooked through.
- For the green bean sauce vierge
- place the oil and vinegar into a bowl
- season with salt and freshly ground black pepper and mix well. Add the chopped tomato and stir.
- To serve
- place the beans onto a serving plate and pour over the dressing. Place the sea bass alongside.
