PAN-FRIED SEA BASS WITH GREEN BEAN SAUCE VIERGE
PAN-FRIED SEA BASS WITH GREEN BEAN SAUCE VIERGE

Ingredients
  • 2 tbsp olive oil
  • 1 fillet sea bass
  • skinned
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • salt and freshly ground black pepper
  • 1 tomato
  • seeds removed and chopped
  • 100g/3½oz green beans
  • trimmed
  • blanched and drained
Directions
  • For the sea bass
  • heat the oil in a frying pan over a medium heat and cook the sea bass for 2-3 minutes on each side
  • or until cooked through.
  • For the green bean sauce vierge
  • place the oil and vinegar into a bowl
  • season with salt and freshly ground black pepper and mix well. Add the chopped tomato and stir.
  • To serve
  • place the beans onto a serving plate and pour over the dressing. Place the sea bass alongside.
