PORK AND SESAME NOODLE SOUP
Ingredients
- 1 tbsp vegetable oil
- 100g/3½oz pork tenderloin
- cut into cubes
- seasoned with salt and freshly ground black pepper
- 1 garlic clove
- finely chopped
- ½ green chilli
- finely chopped
- 300ml/½ pint hot chicken stock
- 100g/3½oz rice noodles
- ½ savoy cabbage
- finely sliced
- 2 tsp soy sauce
- 2 tsp sesame oil
Directions
- Heat the oil in a saucepan over a medium heat
- add the seasoned pork and fry
- stirring frequently
- for 2-3 minutes
- or until beginning to brown on all sides. Add the garlic and chilli and cook for a further 1-2 minutes.
- Add the chicken stock
- noodles and cabbage and bring to the boil. Boil until the noodles have softened and the pork is completely cooked through.
- To serve
- pour the soup into a bowl and drizzle with soy sauce and sesame oil.
