PRAWNS AND PURPLE SPROUTING BROCCOLI WITH CHILLI AND LEMON
PRAWNS AND PURPLE SPROUTING BROCCOLI WITH CHILLI AND LEMON

Ingredients
  • 1 tbsp vegetable oil
  • 16 king prawns
  • peeled
  • 300g/10½oz purple sprouting broccoli
  • blanched and refreshed in cold water
  • 2 canned anchovies
  • drained and chopped
  • 1½ tsp dried chilli flakes
  • 1 garlic clove
  • sliced
  • 1 lemon
  • juice only
  • 1 head pak choi
  • finely sliced
  • salt and freshly ground black pepper
  • 1 tsp sesame seeds
  • ½ tsp freshly grated nutmeg
Directions
  • Heat the oil in a wok until very hot. Add the prawns and stir-fry for three minutes.
  • Add the purple sprouting broccoli
  • anchovies
  • chilli flakes and garlic and stir-fry for a further 2-3 minutes.
  • Add the lemon juice
  • pak choi and season
  • to taste
  • with salt and freshly ground black pepper. Stir-fry for 30 seconds then transfer to four serving bowls.
  • Sprinkle each dish with sesame seeds and a little freshly grated nutmeg and serve.
