PRAWNS AND PURPLE SPROUTING BROCCOLI WITH CHILLI AND LEMON
Ingredients
- 1 tbsp vegetable oil
- 16 king prawns
- peeled
- 300g/10½oz purple sprouting broccoli
- blanched and refreshed in cold water
- 2 canned anchovies
- drained and chopped
- 1½ tsp dried chilli flakes
- 1 garlic clove
- sliced
- 1 lemon
- juice only
- 1 head pak choi
- finely sliced
- salt and freshly ground black pepper
- 1 tsp sesame seeds
- ½ tsp freshly grated nutmeg
Directions
- Heat the oil in a wok until very hot. Add the prawns and stir-fry for three minutes.
- Add the purple sprouting broccoli
- anchovies
- chilli flakes and garlic and stir-fry for a further 2-3 minutes.
- Add the lemon juice
- pak choi and season
- to taste
- with salt and freshly ground black pepper. Stir-fry for 30 seconds then transfer to four serving bowls.
- Sprinkle each dish with sesame seeds and a little freshly grated nutmeg and serve.
