ROASTED MAPLE ORANGES WITH FRENCH TOAST AND CREAM
ROASTED MAPLE ORANGES WITH FRENCH TOAST AND CREAM

Ingredients
  • 2 free-range eggs
  • beaten
  • 150ml/5fl oz whole milk
  • 1 tbsp caster sugar
  • 2 slices white bread
  • 25g/1oz butter
  • 2 tbsp maple syrup
  • 1 orange
  • segmented
  • 2 tbsp double cream
  • icing sugar
  • 1 tsp chopped fresh mint
Directions
  • Beat together the eggs
  • milk and sugar in a bowl. Dip the slices of bread into the liquid
  • allowing it to soak in well.
  • Heat the butter in a frying pan and fry the egg-soaked bread until golden-brown on both sides
  • about two minutes per side.
  • Heat the maple syrup in a small saucepan and add the orange segments. Warm through for 2-3 minutes.
  • Serve the French toast on a serving plate with the oranges and maple syrup spooned over the top. Serve drizzled with cream
  • dusted with icing sugar and garnished with chopped mint.
