SAUTéED POTATOES WITH PARSLEY, GARLIC AND LEMON
SAUTéED POTATOES WITH PARSLEY, GARLIC AND LEMON

Ingredients
  • 2 tbsp olive oil
  • 300g/10½oz new potatoes
  • cooked
  • quartered
  • 2 garlic cloves
  • finely chopped
  • 1 lemon
  • zest only
  • salt and freshly ground black pepper
  • handful fresh parsley
  • chopped
  • handful fresh basil
  • chopped
  • 1 lemon
  • halved
Directions
  • Heat the olive oil in a frying pan over a medium heat
  • add the potatoes and fry for five minutes
  • stirring frequently.
  • Add the garlic and gently fry for one minute. Add the lemon zest and cook for a further 2-3 minutes. Season well with salt and freshly ground black pepper
  • add the herbs and the juice of half the lemon and stir well.
  • To serve
  • place the potatoes into a serving dish. Cut the remaining lemon half into wedges and use to garnish the potatoes.
