SAUTéED POTATOES WITH PARSLEY, GARLIC AND LEMON
Ingredients
- 2 tbsp olive oil
- 300g/10½oz new potatoes
- cooked
- quartered
- 2 garlic cloves
- finely chopped
- 1 lemon
- zest only
- salt and freshly ground black pepper
- handful fresh parsley
- chopped
- handful fresh basil
- chopped
- 1 lemon
- halved
Directions
- Heat the olive oil in a frying pan over a medium heat
- add the potatoes and fry for five minutes
- stirring frequently.
- Add the garlic and gently fry for one minute. Add the lemon zest and cook for a further 2-3 minutes. Season well with salt and freshly ground black pepper
- add the herbs and the juice of half the lemon and stir well.
- To serve
- place the potatoes into a serving dish. Cut the remaining lemon half into wedges and use to garnish the potatoes.
