ROCKET AND PARMA HAM ROLLS WITH PEACHES

Ingredients
  • 100g/3½oz rocket leaves
  • 2 tsp olive oil
  • 1 tsp lemon juice
  • 6 slices parma ham
  • 55g/2oz Gorgonzola
  • 1 peach
  • cut into wedges
Directions
  • Place the rocket leaves into a bowl with the olive oil and lemon juice and mix together.
  • Place some of the rocket leaf mixture onto each piece of parma ham and roll up.
  • Tear Gorgonzola into pieces and arrange between the rolls.
  • To serve
  • place three rolls onto two serving plates and garnish with the peach wedges.
