ROCKET AND PARMA HAM ROLLS WITH PEACHES
Ingredients
- 100g/3½oz rocket leaves
- 2 tsp olive oil
- 1 tsp lemon juice
- 6 slices parma ham
- 55g/2oz Gorgonzola
- 1 peach
- cut into wedges
Directions
- Place the rocket leaves into a bowl with the olive oil and lemon juice and mix together.
- Place some of the rocket leaf mixture onto each piece of parma ham and roll up.
- Tear Gorgonzola into pieces and arrange between the rolls.
- To serve
- place three rolls onto two serving plates and garnish with the peach wedges.
