SALMON UDON NOODLES

Ingredients
  • 250ml/10fl oz chicken stock
  • 2 spring onions
  • cut in half
  • 110g/4oz ready-made udon noodles
  • 110g/4oz salmon fillet
  • skin removed
  • chopped
  • drizzle sesame oil
  • to serve
  • drizzle soy sauce
  • to serve
Directions
  • Heat the stock in a saucepan until simmering
  • then add the spring onions and continue to simmer for five minutes.
  • Add the noodles and simmer for a further five minutes.
  • Add the salmon pieces and simmer for a further five minutes
  • or until the salmon is cooked through.
  • To serve
  • pour the broth into a bowl and drizzle with the soy sauce and sesame oil.
