SESAME PRAWN TOASTS

Ingredients
  • 2 slices French bread
  • cut on the diagonal
  • 2 raw tiger prawns
  • peeled and de-veined
  • 1 spring onion
  • finely chopped
  • ½ red chilli
  • finely chopped
  • 1 tbsp chopped fresh coriander
  • ½ tsp toasted sesame oil
Directions
  • Heat a griddle pan until smoking. Add the slices of bread and grill on one side until golden.
  • Place the remaining ingredients into a mini food processor and blend until smooth.
  • Spread the un-toasted sides of the bread with the prawn mixture and then place prawn side down back onto the griddle pan to grill for three minutes or until cooked through.
